[recipes] homemade devil’s food cake with homemade cream cheese frosting

good afternoon! i have a busy monday at home today, but i’m taking a little lunch break to blog!

i don’t know what it is about the summer, but i always want to eat healthier [said the girl chomping down leftover pizza hut stuffed crust pizza right now…]. maybe it’s because we will have tons of fresh veggies from the garden and i only buy veggies and fruits from the farmer’s market in the summer. i also don’t mind making things from scratch… i really want to start making yummy breads and pasta homemade. i think it scares me a little looking at food labels. i’ve recently been WAY more conscious when it comes to dyes. i make sure before i buy healthy options, like yogurt, to make sure there is no artificial dyes in them. [danimals smoothies pass the test & the kids love them!]

one thing i also like is homemade cake and frosting. my mom always makes homemade powdered sugar frosting for christmas. i hate reading labels for sweets and not knowing what half the stuff i’m putting in my body is!

so, last night i wanted to make red velvet cupcakes and realized that i had to put one ounce of red dye [an entire bottle of food coloring!] into the cakes! no thank you! my man and i both agreed… it’s too much. so i put a few drops in and “tinted” them. but after reading canned frosting, i got a little nervous! the second ingredient was partially hydrogenated soybean and cottonseed oil! YUCK! let’s eat something better for you… it takes a little bit more time, but is SO much better for you.

i made mini cupcakes… easier for kids to eat! if you are baking them as cupcakes, do large cupcakes anywhere between 18-20 minutes and mini cupcakes i do at 20 minutes.

here is my homemade devil’s food cake recipe:

1/2c butter, softened
1 1/3c sugar
1/4c dutch processed cocoa
2 eggs
1tsp vanilla
1/2c sour cream
2c all-purpose flour
2tsp baking soda
1tsp salt
1c boiling water

grease and flour a 9×13″ baking pan. set aside.
sift together flour, baking soda and salt. set aside.
in a large mixing bowl cream butter, cocoa and sugar for about 3 minutes.
add eggs and vanilla and beat until smooth and creamy.
add sour cream and mix until smooth.
add flour mix and mix just until blended.
slowly add boiling water and beat until smooth.
bake in a preheated 350 degree oven for 25-30 minutes.
test with a toothpick.
cool in pan 10 minutes and move to cooling rack.

here is my homemade cream cheese frosting recipe:

2 -8oz packages cream cheese, softened
1/2c butter, softened
2c sifted confectioners’ sugar
1tsp vanilla extract

in a medium bowl, cream together the cream cheese and butter until creamy. mix in the vanilla, then gradually stir in the confectioners’ sugar. store in the refrigerator after use.

to decorate: i used a wilton 12 round tip. i added chopped walnuts for a final touch.
